Your current configuration uses a Ryzen 5 5600 with a Gigabyte X570SI Aorus Pro AX board. You're considering undervolting the CPU. Running the board in Auto mode doesn't allow you to adjust voltage offsets, so you'd need to set an offset manually if you choose Normal mode. Leaving it on Auto is simpler but may not give you the performance benefits of a custom voltage setting.

Low voltage, not high.

With PBO turned on, everything else follows the default settings. Run Prime95 with a small FFT without checks. Keep loading until the temperature stabilizes and monitor Core voltage using HWInfo64. This method is known as the Fitness voltage. Adjust your over/under clocking and voltage readings based on that core's voltage at load. A maximum of 0.05v under would be my personal limit. If it reaches 1.28v, consider a fixed 1.25v and test. Otherwise, standard negative offset works fine. Auto mode keeps things at defaults, which is normal since adjustable offsets are preferred for gaming.
