I don't have a direct way to check your current Windows version, but you can find it by opening Settings > System > About or by running "winver" in the command prompt.

I purchased the disk and it shows a full version, but when I try to update it I see Windows 10 Home. I believe I should still be using Windows 8.1 Home, though I’m not entirely sure.

You're heading back home. If the message had mentioned "Windows 8.1 pro" or "Windows 8.1 pro with media center," you'd have received (or been set up for) Windows 10 Pro.
