Once enabled, they mention that Windows updates fail to detect it for some time. For an upgrade to 11, it’s recommended to use the installation assistant. https://www.microsoft.com/software-download/windows11

When I turned off TPM, the status changed right away instead of waiting. MS seems to behave oddly in this situation.

I understand completely. When they refuse something, it feels instant, whereas letting things unfold with updates takes time.

I'm cautious about W11 too, but why would a 5900X fail to satisfy W11 specs? The updates kept pushing the upgrade, trying to force me into it.

Several factors to consider. If TPM or secure boot isn't activated, compatibility may be lost. I've been using version 11 since the release and haven't encountered major problems. The internal builds tend to have some issues, which is why they're not open-source. I've tried a workaround on an older Core 2 Duo machine, and it actually performs better than version 10. Similar to version 10, I suggest using thisiswin11 to improve speed and responsiveness.
