Revisiting the single "constant" suggests the issue is intermittent and might be linked to a loose connection. Once the system finally starts, it warms up, tightens the link, and everything functions normally until the next shutdown.

It could also mean a simple vibration or movement is enough to restart the system.

The sole rule is to always disconnect and reconnect it each time. I've verified all connections and cleared the area when installing the new PSU.

Feeling quite stuck on this topic.
One idea comes to mind—this motherboard?
Please check the document at the provided link.
Review the LEDs mentioned on pages 1-22 and 1-23.
Observe the behavior during operation, after shutdown, before the first restart, after a failed attempt, and once the system is fully running.
Consult the Q-Code table (Appendix A) at the end of the manual to understand any codes displayed.
Repeat the process several times; it might be a mix of errors.
Make sure to record observations for future reference.

Check if the PS_ON signal drops to 0 volts upon pressing the power button. Connector 16 on the main power connector.
