I own a 7700x with a SAMA AIO.
Idle temperatures are typically between 60C and 65C, but when loading into games they rise sharply, reaching about 75C.
My previous thermalright peerless assassin had idles around 50C, yet in-game temps climbed to 85C.
I’ve tweaked the fan curves several times to lower idle temps.
Is this a subpar AIO?

There are several Thermalright coolers in the Peerless Assassin lineup—any you used before? What model of AIO did you install? How is the AIO positioned inside your chassis? What’s the ambient room temperature?
7700x aims to increase clock speeds and power output, which may lead to higher idle temperatures, but it can also achieve greater performance. The same applies to temperatures—up to 95°C it is built to focus on that level. This explains why air temperatures reached 80°C; likely you're seeing lower temps at 75°C with a stronger boost.
