On standard version (no extra fee) you receive a license only for the Chinese version. On preinstalled versions, you cannot change the language to anything other than Chinese. If you install English Windows, you must activate it separately by purchasing a license or another method 🙃. I cannot comment on office use or logging to the MS account.

Did you install the disk? Is it compatible?
What are your observations after using it for a while?

Yeah, I've set up the disk with the adapter. In my situation, the preinstalled M.2 screw-on empty slot was really tight (probably because I used a bit too big a screwdriver). I couldn't take it out to install the disk, but using an adapter made it easy without removing the screw. If the disk was full at 2242, I might have had trouble. My other issue is that I really like it 🙃

It would be helpful to know more about your preferences. One more question, how does the screen appear when using Gnome? I like the default but I understand that the scaling doesn't work as smoothly as in Plasma or Windows. Does it seem too large? Could you share a photo or screenshot with some text on the screen?

I'm using it at 125% scaling in gnome with wayland and it looks fine. I dont have comparison to kde. I think only issue is on login screen when the 125% setting is not respected and image is bigger 200% propably. The fractional scaling options in gnome are 125, 150, 175 ... 300%.
