You likely installed the OS on your M.2 SSD but forgot to format it properly or didn’t create a bootable drive. Try formatting the SSD with a proper OS installation media and then reinstall your operating system.

Check the BIOS settings and select the OS disk as the boot device, or try the first available disk to start booting.

Even when you point the UEFI/Bios to the OS drive, the OS drive might lack the bootloader. The bootloader is the information stored on the drive that tells the system how to start. Without it, the UEFI/Bios won’t know what to do with the rest of the data. Ensure your bootloader isn’t on the HDD, or you’ll need the HDD to boot. It seems to function without the second drive, but your PC still experiences blue screens occasionally. It usually restarts after about a minute, though it happens twice a week.
