Octopi is acting quite determined, and I can't install AUR. Seeing videos online shows everyone uses the Package Manager—was I thinking about switching to it?

Yes, you probably mean "pamac" You can install it on Manjaro, the package is called pamac-aur or pamac-manager, or pamac-git, there is even an AUR version. You enable AUR support from that, I actually remember it should be preinstalled on Manjaro as well
