Is there any chance Swiftech's h240x2 pump can handle a custom loop setup with the CPU plus three-quarters of a GPU? I already have the cooler for my CPU, but I plan to upgrade soon with two more GPUs. I'm considering getting an EK terminal and GPU blocks—please let me know.

I'm cautious about anything beyond one GPU, mainly due to the extra block and radiators. Adding three or four cards under water will require more space for radiators. I own a 980Ti, a 6700K, and a 3X140 radiator, which works well when gaming. My EK D5 PWM pump handles it, while the Swiftech pump is rated for about half the pressure and just over a third of l/hr—still acceptable. The water needs to stay in the radiator long enough to release heat effectively, but more components require additional water and radiators.

Hey! Yes, it should work well—you can fit two triple 120mm radiators and a pair of h240 units with dual 140mm ones comfortably.
