I wouldn't claim all B550 boards automatically support BIOS 5000, as compatibility depends on the manufacturing date. I had a good experience with my Asus TUF B550-PLUS, which ran smoothly with a 5900X (though it was made in January 2022). However, boards produced later—especially those sitting on shelves for months—might require a BIOS update. The exact BIOS version depends on when the board was made and shipped, which isn't always clear without the serial number.

That variant of the X570 chipset came out after the 5000 series launched, so all of them will be compatible with the 5000 series chips. That said, the odds that you will get a new B550 board in 2022 that happens to have sat on the shelf for 2 years, and so doesn't have the necessary BIOS, is highly unlikely. Maybe if you're buying a used or refurbished one, you could be concerned, but I wouldn't worry about buying a new board. It's going to be compatible unless you're insanely unlucky.
