My MSI laptop with a 60Hz screen renders over 180 frames per second in Fortnite. If I were to purchase a 165Hz monitor and link it to my laptop, would I perceive a smooth 165Hz experience on the monitor?

If you’re viewing at a 1080p resolution, performance should be acceptable. However, 144Hz appears to be the ideal or highest refresh rate that a 1080p display could effectively use with that graphics card; therefore, a rate of 165 might not deliver the desired results.
