MSi Afterburner handles everything automatically. Just turn on the OSD and select what you wish to track.

Speedfan works well, yet the website lists compatibility with Windows 7 and 8, which makes me doubt its support for 8.1.

I don't rely on speedfan since its readings were off by hundreds of degrees. It also feels quite outdated.
