You won't be able to redirect it. Choose a custom installation and pick the location. After that, you won't be able to proceed. Save the portable apps for that setup.

You can change its path with symlinks. It's not very useful since most programs aren't that large.

Usually you need to pick a custom setup to specify the installation spot. By default, standard installation defaults to x86 and doesn’t let you modify that. If you’re facing issues with any app, it’s likely not set up for another location. Which programs are causing problems? From what I understand, all applications should offer the chance to select where they install.
