I’m not aware of any particular quests that are notably broken, though I’ve definitely encountered many that fail unexpectedly in Skyrim. Sometimes I had to push quests to finish when they were stopping my progress during the main story.

With the unofficial Skyrim Legendary edition patch installed, your missions should work properly. Just make sure your performance stays under 60 frames per second.

Quest breaks don’t occur randomly. They happen only if you already possess the required item in your inventory or if the quest is scheduled in an order that isn’t meant for it. However, on the PC you can fix this issue using the command line.
