You might consider the R9 390X for that setup, especially with those extra gigabytes needed. Alternatively, an i5 paired with a 980Ti would work well, as the i7 isn’t great for gaming.

It really varies depending on the type of mods you have. Too many script mods can heavily strain your CPU. The biggest impact comes from skyrim's lack of multi-threading. ENB usually causes the most noticeable drop in FPS. Mods like K ENB tend to be quite demanding.

I've managed to keep everything stable so far without any crashes. The performance is solid, though I need to adjust the grass settings occasionally.
