To remove the Steam shortcut on your Mac, you can delete it from the desktop or Finder. Since the shortcut has an .app extension, simply moving it to the Trash and emptying it should work. If you prefer a more permanent solution, you can also adjust your Steam settings to hide or disable the shortcut creation. This way, you maintain access to the game without cluttering your desktop.

ok so just move it not delete it. it is in the launchpad, there is a folder called games and it's there but it's not in the applications folder, there is no Subnautica there, weird. Did it just get installed on the Desktop? if I move it will it work properly?

it doesn't say in the game settings but in steam settings it says downloads is Library/Application Support/Steam. So this is only a shortcut then?

Consider discarding it and attempting to launch the game again. If that fails, you may reinsert it.
