Hey there! For a Windows 8.1 setup, dual-booting with Windows 7 Ultimate is possible. You don’t necessarily need to burn the ISO to a disc—just use the USB installation app. It should let you write the image directly to your USB drive. When you boot, choose the USB option in the boot menu or adjust BIOS settings if needed. The process is straightforward with the right tools. Let me know if you need more details!

A free tool named rufus can transfer the .iso file to a USB drive. After installation, check the post page for boot options (often F8 or F12). Press the linked button and complete the steps. Everything should work smoothly.

You might be interested in Ultimate because of the variety of language options available. Installing it from an ISO lets you begin, but it seems limited to upgrading rather than a fresh setup on another drive.
