We're not sure about the intended purpose of the server. For now, it seems to be just providing a space for the operating system—around 20GB should suffice, and 40GB would be more than sufficient with updates. My only 2008 VM is running on 16GB.

I previously had a 40GB SSD for my Windows Server 2008 R2, running simple services and one virtual machine. I often ran out of space quickly. If you need features like IIS or Hyper-V with data/VM on the same drive, I suggest upgrading to at least 60-80GB.
