FTL is a top choice for me, getting all the ships is really satisfying (seriously, slug and stealth tier 3).
I enjoy playing The Sims 4 and Cities Skylines the most.
Need for Speed, Tomb Raider, Dirt 3 or 4.
It seems you're thinking of a racing title. I'd say Forza Horizon 3 fits the bill, but it's not available on Steam.
