She intends to stream services like Netflix or Hulu while also handling office tasks such as opening and managing PDFs. She prefers a device that doesn’t require cloud storage and has a storage capacity ranging from 1 to 2 TB, ideally around 2 TB. Her budget is around $800, though she hopes to find something more affordable since she isn’t planning to play games.

The main point is that a 2TB drive at a reduced cost isn't really feasible. You're thinking about higher-end setups with a higher base price.

Although it's a gaming laptop, it performs well for everyday use and will last a long time. Even though it has a 512Gb drive, you could upgrade to a 2TB drive, install it, and run Windows. That would bring the system cost down to around $750.
Good advice here. On both of my latest laptop buys, adding a 2TB SSD was really expensive.
Buy it separately and install it yourself.
Include part of the work to do a complete clean install of Windows along with the apps, programs, and utilities you need. This helps remove the unnecessary stuff that comes with the factory setup of Windows.
