Guild Wars 2 offers a free base game. The battles are straightforward without demanding fast reflexes. Discovering the world provides satisfaction, and the story—especially with expansions—is engaging. In short, it's a relaxed MMORPG.

He likes playing South Park. The Stick of Truth offered a lighthearted, easy-to-play RPG with basic battles, but you need to appreciate the show's humor.

Dragon Age, Skyrim, Witcher 3, and Knights of the Old Republic all offer engaging experiences. If you enjoy space fantasy, GOTG stands out with its clear story, while Dragon Age and Skyrim provide rich worlds. The combat in these games is straightforward and satisfying.

Skyrim, Witcher 3 and Fallout 4 are often considered. When your PC isn't powerful enough, Skyrim is the most manageable of the three.

Talisman Online impressed greatly; it's also completely free. Star Trek Online follows suit.

It seems your father would likely enjoy an MMORPG, as they tend to be straightforward to master and focused on winning battles. If you fall into the hands of an enemy, you can simply switch to another game or engage in guild wars 2, which matches what you described. I understand he might not appreciate cartoonish visuals, but Minecraft in peaceful mode could be one of the top exploration experiences available.
