Your choice depends on what matters most—features and input/output arrangement. If I had to select, I’d go for the Asrock only since I’m familiar with its AM5 version and really like it.

I considered opting for the non-WiFi model at a lower price, around £30 savings, and choosing a budget M.2 Wi-Fi card.

You're likely spending £30 on a similar Wi-Fi card, which doesn't make sense. Depending on your GPU's thickness, it could affect performance. For BT connectivity, you'll need to use the USB2 header on the board, which might be useful for other purposes. If you want Wi-Fi, opt for the Wi-Fi version.
