I acquired some components from a friend, but the motherboard was packaged inside the case. The screw appears to be jammed and won’t move.

Assume the screw is threaded in the opposite direction. Remove the mobile part (if the standoff spins with the screw, you’ll just remove the standoff from the case) and pull the mobile out. Then position pliers on the stand and unscrew the screw from there.

Try turning the screw, it should loosen and release the stand-off. After that, you can remove the mobile device and it will match the setup shown in the video.
