I recently purchased a PC equipped with a Ryzen 3 3200G and an Asus A320M-K motherboard. I’m considering whether to overclock the CPU or GPU on this machine, especially since I’m using the stock cooler. The primary use is gaming, so I want to know which to prioritize and what safe limits exist. Please keep in mind that I’m already using the stock cooler.

If the better wraith spire cooler is available, then you can increase performance a bit. However, the regular coolers aren't designed for significant overclocking.
What are you aiming to overclock?
Regarding whether it will perform well, every chip and setup behaves differently. The best way to find out is by experimenting. But initially, you should understand your motivation for overclocking.
