Based on what I've seen, 3600 works well with x264 Fast at 1080p60 even when running heavy games.

I was considering the same issue except for the gaming aspect. Although I plan to play games on my system later, right now I’m evaluating algorithms for machine learning. Which processor should I choose—2700X with more cores but slower performance, or 3600 with fewer cores but faster speed?

According to Passmark, you’ll extract better performance from the 3600 compared to the 2700X in both single and multi-threaded tasks. You can also configure them for overclocking up to 4.2GHz across all cores for enhanced multithreaded results.
