I've got a Ryzen 7 7700x paired with the Peerless Assassin 120 SE. I'm looking to customize the fan curve—keep it quiet but still effective during gaming. It's a bit unclear where to begin, so any advice would be helpful.

I owned a 7700x with an AK620 Digital for some time. My fan settings stayed constant at 30% speed until reaching 93°C then ramped up to full. AM5 tends to run warm, but the CPU remains unaffected whether it's at 63 or 87°C! You'll still maintain full clock speeds until around 95°C. On my 9800X3D I use the same fan curve and enjoy a quieter system. I've never exceeded 80°C during intense gaming sessions. Just try setting the fan curve as high as possible without it becoming noticeable or disruptive, and see if that's sufficient.

Yes, consider the same approach for the case fans.

Thats what I do and its been working well for over 20 years I dont like fan noise at all so I just set my fans as fast as I can without them being audible or bothersome to me. Its always been enough. This is my CPU fan curve.
