In short, your CPU should be okay. The issue seems to be with the water-cooling loop setup and the connection to the CPU fan header, not a problem with the CPU itself.

RIP 500$ CPU you should be okay as long as you have the cooling plate installed. It should manage most light tasks with just that.

It will function perfectly as long as fluid flows. If water isn’t moving, it will stop within about two minutes due to overheating safeguards. You’re not required to connect the CPU fan header unless you prefer, or if running cables in a different path makes more sense. Simply turn off monitoring on that header in the BIOS.

It will function perfectly as long as fluid flows. If water isn’t moving, it will stop within about two minutes due to overheating safeguards. I'd be surprised if anything failed. As long as water stays out of the chip, everything should be okay. The thermal limits would have already been reached before any issues arose, and since the pump was active, there was no chance for thermal problems to occur. Keeping the fluid flowing means you're safe.

I was hoping it wouldn't fry, but thank you. At least I'm feeling better now that I didn't nearly damage my CPU.

Water soaks up a lot of heat, so even without the pump connected there's no risk for starting the computer for a minute as long as there's no leaks. You just don't want to put a load on it without flow.
