It seems the difference between 5600g and 5700g is noticeable, but with a 3070 it might not be crucial. You’ll likely maintain around 100 FPS regardless (200 even in less intense titles), so whether someone can hit 130 fps or 140 doesn’t really matter much.

The 5600G or 5600X is an excellent gaming CPU. You’ll likely maintain over 100 FPS in almost every game. For multitasking, the 5800X offers more flexibility. Both support 1440p and light to medium 4K smoothly.

Certainly the 5800X performs better in most cases, though the price or GPU might be a concern. The main question is whether the extra cost is justified compared to a 5600G or 5600X for his wife's gaming PC. I believe a 5600G or 5600X would suffice.

It doesn't make sense to use a slower 5600G or 5700G APU with a PC that has a 3070, but you should opt for a faster model like 5600X or 5800X based on your budget.

If I had to pick between the 5600X and the 5600G, I’d choose the 5600X. The 5600G doesn’t support PCIe gen.4 and generally performs worse than the 5600X because of lower L3 cache. You also don’t need an integrated graphics card. You might be wondering why I didn’t include the 5600X—if you’re from Norway, it’s available locally. The 5800X offers better performance, but unless you need it for heavy production work, the price gap may not be worth it. It also tends to get hot, so a solid cooler is important.

Your recollection about the stock cooler is accurate, but the details on PCIe lanes are different. The latest APUs provide the same lane count as other CPUs. Only the 2000 series models (2200G and 2400G) had a restricted number of PCIe lanes. Regarding the 5600G, it only supports PCIe 3.0, whereas the Ryzen 3000 and 5000 series non-APU parts use PCIe 4.0.
