I discovered a used x370 crosshair on eBay, but it doesn’t work with the 5000 version of the Ryzen processors. Would it be possible to install an x570 BIOS onto the 370 to enable compatibility?

Visit the official support site for Asus and look into CPU compatibility. The information doesn't reference the Ryzen 5000 line, meaning you can't legally flash it.

300 series boards aren't receiving official support for Zen3 CPUs, and you can't simply update an X570 BIOS onto a X370 board. Doing so might render the board unusable and prevent any successful flashing.

They say it's not possible, but... there are some images showing people using a Ryzen 5000 on an A320. It's not confirmed, and I wouldn't suggest it.
