R5 1600, since 2600 isn't a substantial improvement and shouldn't be picked for this much more. Invest the surplus in RAM, SSD, or GPU—anything other than 2600.

Search for a new 1600 "AF" chip. They cost around $85 USD now, offering better performance than the original 1600 but not quite matching the 2600. The price is quite reasonable.
