I experienced the same issue as you.
I wasn't trying to add anything new, just wanted to let you know you're not alone.
I had Windows 11 installed on disk 1 and attempted to switch to Windows 10 on disk 2.
Once done, I had no choice but to use disk 1 and it wouldn't exit the BIOS at all.
Each time I rebooted, I remained stuck in the BIOS.
The Windows 11 files were still present, but there was no way to boot into it.
I tried using Startup Repair from a bootable Windows 11 USB, but it also failed.
It couldn't locate any installation to repair.
Eventually, I had to format the entire Windows 11 disk.
There is no way around this except to format the old drive. As mentioned earlier, even disconnecting the new drive doesn't make the old one appear in BIOS.
The boot loader could indicate EVO 860, but the actual system is running WDS100T1X0E

Add bootloader entry for drive D in Windows
Run from elevated command prompt
bcdboot d:\windows
Choose which windows to load during each boot
