Which 550W PSU? Considering the restricted overclocking potential on both a 2700X (possibly 150W peak) and a 2070 Super (around 250W peak), a reliable 550W unit would be more than sufficient.

The exact PSU is important for your setup. You should be fine, but having a bit more capacity would be better if it were your build. The 2700x could handle around 140W at full load, while the 2070 might draw between 240-250W, depending on the model, but you should be okay.
