I've personally transported around two hundred rounds of pistol ammunition (stored in a backpack on a motorcycle heading to an outdoor shooting range), but in the game you can only manage about six dozen rounds for six firearms. It's even more absurd that you can actually carry six weapons at once—like a pistol, a bow, a flamethrower, and a melee weapon. You'd probably think you could share your extra ammo, molotovs, or medkits with characters like Ellie, Dina, or Tess.

They might have thought it would be better to cap the total ammo available instead of restricting how much you can actually carry. It seems even carrying one box is too much for them.

Yes as said the gaming world is not reality but travelling through a post apocalypse world full of zombies the ammo will be in short supply I imagine.
I also think that it's part of the game training to teach you to make the most of each bullet. And I believe like most games you get upgrades later.
It is frustrating though. I'm stuck upside down in a trap and I don't have enough ammo to kill them all. I might have to restart earlier checkpoint and look for more ammo.
There is a Deluxe upgrade which increases rifle clip size, increases healing and crafting skills.
Days Gone is the one for motorcycles, zombies, guns and ammo.

In TLOU part 1, I recently encountered four rounds of revolver ammunition that I couldn't grab. It's ridiculous. I could hold four rounds of .357 or .38 in my mouth FFS.

I appreciate gaming because it immerses you in a virtual environment with its own logic and reasons, and even realistic games have their own unique traits. Did you try playing DG and enjoy it? I recently started playing Ghost of Tsushima and I'm exploring a completely different setting.
