Hey, I’m planning to install a water cooling system with my GTX 1080 Ti and I was curious about adding an extra graphics card. I already have what I’m getting and everything else figured out... I just want to know if it’s possible to fit another one like this...

Correct, there are ports on both sides and connectors for the sides that should remain unused.

and what do you mean by "like this" ?
you want it flipped upside down? do you need rigid tubes?
mostly everything is feasible.
i’m not sure about GPU blocks... i’d like both IN and OUT tubes coming from the bottom, not just IN from the bottom and OUT from the top...
like this

yes, tubes can be positioned either on one side or on multiple sides. it doesn't matter.
