I'm just getting started with OC techniques, but I think I might be overlooking something simple. I watched a video on jayz2cents about using MSI afterburner to overclock the GPU. One part I couldn't replicate was setting the temperature as a priority since that option wasn't available. After adjusting the settings, I increased the core clock by 25 each time. Before the OC, I ran a Unigine Valley benchmark. After each adjustment, the system would crash repeatedly at around +175MHz. I adjusted back to the setting with the best results—+150MHz, which was 2062MHz—and achieved a max FPS of 150.9 and a minimum of 35.1. I ran another test on that setting, but this time the FPS dropped to 120 and the lowest to 29. I'm puzzled as to why performance suddenly plummeted when it was peaking at the same setting. Any advice?

Did you verify the temperatures? Are they consistent? Can you confirm the fan curve is set correctly? Also, make sure nothing is running in the background. Honestly, max FPS isn't crucial—I think average FPS matters more. But since temperatures are rising, it might be worth downcloning.
