My main concern is choosing a PSU that keeps things under $1600, ideally around $1650, while still being fast and looking good. You’re aiming for about 20 or 30 watts left after overclocking, so you’ll need something reliable.
I really want a PSU that can handle the stress of future upgrades without failing.

750 should give you plenty of room for expansion. Instead of using AS5 for paste, I'd suggest Thermal Grizzly Kryonaut. The memory is a little slow for those timings. If I were going to use anything less than 3200, I'd make sure it had a maximum of 14 CAS.
