I rely on CPU-Z for system monitoring. For NVIDIA GPUs, Evga Precision X works very well.

MSI Afterburner produces charts for these purposes. OCCT offers visualizations too, with the option to export them as files. Some users only display data in numbers, except Aida64, which saves a CSV file of numbers.
