These boards should generally function properly https://www.newegg.com/p/pl?N=100007629 601186375&Order=PRICE However, they tend to be expensive, and many lack desktop features such as audio capabilities. I might opt for a different processor instead.

Opt for a $89 4-core Ryzen 3200 with built-in graphics instead of the Xeon. It should suffice for Minecraft. The motherboard isn’t inexpensive either.

For a kids' computer today, either buying a used unit or opting for a Ryzen 3000G makes sense. The E3-1270v6 chip is tricky because Intel banned it on regular desktops and needs a separate GPU. I’m also using an E3 model—E3-1231v3 works with standard Haswell boards and offers good value at the time. I’d recommend a system with a Ryzen 3000G APU, room for a future GPU, 16GB dual-channel RAM, and a 480GB NVMe SSD. This setup would be solid mid-range with room to upgrade later.
