You're not wrong. The Windows 10 interface automatically adjusts for your display aspect ratio, making manual changes unnecessary.

It varies. VirtualBox isn't the best virtual machine software available, but it's a preview version. If GuestAdditions is installed (you should see an option in the top toolbar), you can adjust the resolution just like in Windows. I tried VMware Workstation and it let me set the resolution freely. Fullscreen mode would automatically adapt to 1920x1080 if that was your monitor setting.
