To display your video live without delays, AE should automatically prerender the entire clip. But this isn’t ideal because long videos—like 1 to 2 hours—require gathering multiple clips, and slow previews mean you have to wait a long time before seeing them in real time. This is frustrating. How can I achieve the same experience as Sony Vegas? What steps can I take to make AE work like that too?

Effects aren't the best choice for video editing; go with Premiere instead. After Effects is mainly for adding visual effects, and rendering is required. Pressing zero on your keypad will remove certain elements. Let me clarify how this functions if you're considering AE.
