Yeah, Unraid is a solid choice with strong CPU and two GPUs. Since I only have one GPU and an i5 processor, it’s not feasible... But I figured there might be alternatives that let me play games and watch movies at the same time using a gamepad while she browses.

There isn't a simple solution since Windows allows only one mouse and keyboard at once.

You possess two GPUs, but you're not focusing on this. Since your CPU includes a GPU, especially for an i5 3k Series or newer...

Another approach is searching for used parts and checking out PCs. For browsing the web, you need something that works on Windows 7 or AMD64 systems, or at least an AMD64 Linux version. Those should be discarded quickly. I wouldn't suggest going below DDR-2 SDRAM; DDR-3 is better but you can usually find what you need in older parts... Core 2, AMD K8/Am2 or similar...

You can use an Xbox 360 to access the internet and browse websites. Netflix works well with a wired controller. If not, try unraid using your IGPU and DGPU, and enable one vote for PC tasks. Alternatively, consider purchasing an item around $50 on eBay.
