Hey.
I'm setting up the next gaming PC:
Intel Core i5-10600K 4.10 GHz
Gigabyte Z490M
Corsair Vengeance RGB Pro Optimizado AMD DDR4 3200 16GB 2x8GB CL16
Corsair Cooling Hydro Series H45
Gigabyte SSD M.2 2280 256GB PCIe 3.0 x4 NVMe
Seagate BarraCuda 3.5" 1TB SATA3
Mars Gaming MCM USB 3.0 con Ventana Negra
Corsair CX Series CX550F RGB 550W 80 Plus Bronze Modular
I'm wondering if I can run games like Destiny 2 or Genshin Impact with an OC, without a graphics card, at least in 1080p. Will it still be playable?
Thanks.

The situation is quite challenging to describe accurately. Perhaps in the future you can use the iGPU for gaming, but currently it's not feasible at 1080p. Regarding your build, please abandon the AIO you mentioned—it's just a waste of resources and provides minimal cooling. Consider getting a 240mm radiator or a more advanced air cooler. Also, replace that PSU with one from the TX or RM series.

Play at the lowest levels and you'll still see far below 60 FPS. This makes it difficult for some players and acceptable for others.
