What frame rate does Fortnite run at (I experience 90 FPS with 1080p ultra settings on a GTX 970)? And which component is active at 50C under stress? CPU or GPU?

the gpu operates at 50 Celsius with a resolution of around 1300 x 700 (this value isn't perfectly precise as I can't verify right now), which means it's below full hd.

I achieved more than 100 frames per second using a 2700x resolution at 1440p.

That's not ideal. Your performance drops significantly when switching to lower resolutions in Fortnite, especially with the same hardware specs. Try changing your power plan to high performance to check if it improves stability.

I adjusted it to high and it now operates at 200fps in spots with few people! Is that okay? Also, the real resolution is 1360 x 765. Plus, in areas with a moderate crowd it runs between 60-100 frames.
