haven't encountered anything similar, but perhaps you could set up your monitors to function as a unified double-wide screen... for instance, with two 1920x1080 displays, you should be able to run them together as one 3840x1080 monitor. When the game splits the screen in half for co-op, each player should see their own portion on one display. Of course, this only works if the split is perfectly vertical and centered. If the game divides the screen horizontally, you'd need to adjust your monitors to be taller instead... otherwise it could cause issues. Capcom enjoys this unusual split:

I can't locate the app in AMD ReLive, yet when using Co-op on dual screens it assigns one player to each monitor automatically. My brother seems to use it, so I think NVidia likely offers a similar option inside GeForce Experience.
World in Conflict might display a large tactical map on one screen and let you play elsewhere. Such a setup is uncommon, but it's a rare game trait.
