Is the "delid" process secure? I've invested a significant amount, so I don't want it to fail and end up needing a replacement.

Supershadow515 describes delidding as a final resort, to be performed only when temperatures remain unmanageable after proper cooling methods fail. Not every 7700k component will face thermal issues. Take your time and compare premium air cooling with AIO options. If watercooling becomes your choice, consider Swiftech or an EK kit.

Yes, delid is secure if you hire a professional (it costs around 50€), but it comes with a price tag.
You can handle it yourself, though it's more challenging.
If you lack confidence in doing it yourself, consult a specialist—it's safe.
It's as secure as replacing standard thermal paste, except it occurs internally.

I believe it's wise to remain cautious and hold off on using the delid until absolutely needed.
In the meantime, I seem to have discovered an air cooler that appears suitable:
