You can select the update timing yourself. This feature is available in Windows 7 and likely works in Windows 8 as well. Simply access the Windows update interface, locate the settings option on the left taskbar, and pick your preferred download schedule.

It might fall outside your usual focus, but I understand that the Squid program operates a proxy server which stores cached websites and updates. If configured properly, this can reduce your Windows update data usage to what it would be for a single machine, limiting fetches to nighttime only. The linked site offers a broad overview, but you appear capable of adapting the steps to fit your specific needs.
