According to what I've heard, Blood Money offers the top Hitman experience, while Absolution provides a more enjoyable alternative if you're not too serious about it.

I'll talk about contracts and blood money, ignore the rest. Most folks I meet who mention absolution sound fun, but then they jump to the only hitman I played—Hitman 2 still feels fresh, and it doesn't play well on modern systems.
