If you haven't tried it yet, I strongly suggest exploring The Witcher 3—it's stunning and offers comparable mod support to other Bethesda games.

I'd love to dive into Witcher 3, but I'm stuck. I got Witcher 2 and played it for the first ten minutes before dying often. Then I bought Witcher 3 and played it for half an hour, but now I'm not interested anymore because I have to look for a kid in trouble—just a king. Oh yeah, the combat is still tough. The original Skyrim has more mods overall, but if you search for "Skyrim special edition graphics overhaul," you'll find updates that make it look better and more challenging.

The vanilla version works well enough, but shader packs can add a nice touch of variety and polish.

Vanilla looks strong, but the 1080ti can hit over 100 FPS at 1440p. Upgrading to something like Halk Hogan's latest graphics pack would be ideal. http://www.nexusmods.com/witcher3/mods/1021/? There’s also a mod that lets you fully customize graphics settings, helping you push your system’s limits.

Adjust difficulty to simple. During fights, frequently use tumble/roll and cast Quen spell.
