Hi, I left out my SSD and thought about using an OEM Windows installation on my HDD until it arrives. But since it's OEM, I worried that formatting everything from scratch might prevent it from reinstalling with a new driver. Any problems could occur?

It would be best if you carry out the clean install of Windows onto the SSD as soon as it arrives and use your HDD as a backup for your system. You can do the clean install right away, but you’ll need to reformat the HDD afterward if it’s meant to be used as a data drive. I think you won’t run into any problems at all.
Just keep in mind to connect only one SATA storage device to the motherboard during Windows Install; otherwise, you might face confusion with the OS and serious booting difficulties. If you need more help or a detailed guide on setting up your storage properly, feel free to look at this
