It's frustrating and I'm having trouble understanding what's going on. I tried adjusting several settings, but they don't seem to function properly.

Shadowplay functions best with fullscreen DirectX titles. Using the x264 encoder in OBS improves video quality regardless. Monitor or window capture tends to be slower. It's unclear if Project64 supports it, but testing might help.

You're using x264 and have already tested the game capture feature, but you're still facing issues. It seems the problem persists across different games and even on your 8800GT. Since you haven't found a solution yet, consider checking other encoding settings or trying alternative tools.

These are the configurations I use for streaming my games in fullscreen. I stream at 720p 60fps, but record at 1080p 120fps. When using OBS, I start it from any window and press F12 to capture that specific window.

Wow, those 780 Ti specs are impressive... but they’re causing a black screen issue. It sounds like my current setup isn’t handling them well.

You can adjust the scene and stretch the corners to increase size, though you'll need a solution to ensure the game runs smoothly in 16:9 format.

You may adjust the scene during previewing. However, if the game lacks a native 16:9 resolution, I recommend against attempting to mimic it with OBS—just trim it out.
